Thick noodle soup with fish pastes (Banh canh cha ca) [Edit]

If you are hesitant to consider what to eat in Nha Trang city, Banh canh cha ca (thick noodle soup with fish pastes) should be in your must-try list. It is considered as the specialty in this coastal city.

The main ingredient is fish paste made from certain species of fishes such as lizard-fish, codfish, flying fish, barracuda, etc. There are two kinds of fish pastes including fried and steamed ones. After being net, fresh fishes are cleaned and removed all bones for flesh. Then that flesh will be ground and added onion, garlic and pepper before being fried. As for steamed fish paste, a bit fat and small pieces of peziza are mixed with the flesh before being steamed. In addition, an egg is also added to make color for the paste.

Those tasty fish pastes will be eaten with the thick noodle soup whose broth is made from stewed fish bones. The dish is served with fish sauce, lemon, a bit onion and pepper. If you have a chance to visit Nha Trang, give it a try and enjoy it in your own way.
